Moved In + Easy Chicken Caesar Salad

MIA doesn’t even begin to describe me right now. But after a little over a month, I can happily say that Paul and I have moved into our condo. I’m going to hopefully take some before and after pictures this weekend, but let me just say that having your own home is so much fun…and so much work.

Laundry, washing dishes and cleaning isn’t even the half of it. Paying the bills, cooking breakfast and lunch and dinner, and then just all the random things that happen day-to-day are exhausting.

But I’m fortunate that my boyfriend is very helpful. He doesn’t mind cleaning and he’s put together an insane amount of furniture. Damn you IKEA gods! Honestly, I wish I could be just a fraction of how handy he is. I almost got a blister when I tried to help.

So in short, that’s what my life has been for the past month. Moving in and getting settled. We still have lots more to do, but that’s the gist.

In terms of exercise, my mileage and work outs have definitely slipped since we started living here. I guess that’s to be expected. I get home a little later every day compared to before, and I have to cook dinner for two people. It makes me want to wake up earlier and work out, but eesh. That’s just so not appealing.

I’m starting to accept this though and I’m hoping that in a couple months I’ll be used to this new schedule and back to normal exercise wise. Baby steps!

Easy Chicken Caesar Salad

Before I go, I want to share an easy dinner recipe with you. Since I’m cooking almost every day now, I’m hoping it will mean more blog posts!

Caesar Salad

Easy Chicken Caesar Salad

Serves 4


  • 3 C. chicken breast, cooked and chopped
  • 8 C. Romaine lettuce leaves, torn
  • 1/2 C. yellow bell pepper, chopped
  • 1/2 C. croutons
  • 2 Tbs. parmesan cheese
  • 2 Tbs. feta cheese
  • 1/2 C. light Caesar dressing


Toss lettuce with chicken, croutons and cheeses in large bowl. Add dressing just before serving; mix lightly.
