Southwestern Quinoa with Chicken and Feta

I didn’t think I’d actually enjoy cooking since moving in with Paul but I actually do! I haven’t taken photos of all of our meals, but over the next few days I’m going to share some that are easy and quick!

Southwestern Quinoa with Chicken and Feta


  • 1 C. quinoa
  • 1 1/2 C. cold water
  • 1 bag Archer Farms Southwestern Vegetable Blend
  • 1/2 lb. chicken, grilled and chopped
  • 1/2 C. feta cheese, crumbled
  • salt
  • pepper


Prepare the quinoa according to package directions i.e. add quinoa and water to a cooking pot. Bring to a boil, cover with tight fitting lid, and turn the heat down to simmer. Cook for 15 minutes.  Remove quinoa from heat and allow to sit five minutes with the lid on. Fluff quinoa gently with a fork. Cook vegetables according to package directions. Add to quinoa along with cut up chicken and feta. Add salt and pepper to taste. Serve or refrigerate.
