Corkscrew Pasta with Shrimp, Spinach, Tomatoes and Peppers

Corkscrew Pasta with Shrimp, Spinach, Tomatoes and Peppers

Ingredients:

  • 12 oz. corkscrew whole wheat pasta
  • 1/2 lb. baby shrimp, thawed
  • 1 Tbs. olive oil
  • 1 C. spinach
  • 1 C. cherry tomatoes
  • 1 C. bell pepper, chopped
  • parmesan cheese
  • pasta sauce

Directions:

Prepare the pasta according to package directions. In another pot, saute shrimp, spinach, tomatoes, bell pepper in olive oil for 5 minutes, stirring regularly. Once finished, top pasta with mixture along with cheese and sauce to taste.
