I’m Back and Healthy Steak Burritos!

I know it’s been almost a year and a half, but new year, new leaf, right? Anyway, I’m going to try this whole blogging thing again. We’ll see how it goes. It may not be all the time, but that’s OK! 

So what’s new since last time? I’ve become one of the crazy runner people. I ran three half marathons in 2013 with a PR of 1:47:55. I started a new job in October 2012, which is only ten minutes away from my house. The best part is that the majority of my day is spent writing – win!

Paul and I are still happy living together in our nice little condo. We spend most of our evenings together, but first I get my one hour of exercise, while he hits up the X-Box. Other evenings I spend with my family or friends.


My family actually adopted a dog last year. Her name is Meli and she is probably the smartest dog ever. No joke. They conditioned her to ring a bell when she needs to do her business and they taught her several tricks in just a few weeks.

I’m still cooking as much as I can, and I love to try new recipes. My breakfast and lunches are fairly consistent – yogurt/oatmeal and a fruit + salad and carrots.


Yesterday was NYE, so I needed a splurge of a dinner tonight, so I cooked up some skirt steak for burritos. Delish!

Rice Mixture




Burrito Bowl

Healthy Steak Burritos 


  • 4 tortillas
  • 1 lb. strip steak, trimmed and thinly sliced
  • 1 can black beans, drained and rinsed
  • 1 C.  brown rice
  • 1 C. fresh salsa
  • 2 C. water
  • 1 tsp.  salt
  • 1 tsp. freshly ground pepper
  • 1 Tbs. onion
  • 1 C. shredded cheddar cheese
  • 2 C. lettuce
  • Green sauce (optional)


Combine salsa and water in a saucepan. Bring to a boil. Stir in rice. Reduce heat to a simmer, cover and cook for 40 minutes. Stir in beans. Return to a simmer and cook, uncovered, until rice is tender and the liquid is absorbed. About 10 minutes before rice is done, sprinkle steak with salt and pepper. Spray a  skillet with non-stick cooking spray. Put to medium heat. Add steak and onion.  Cook, stirring occasionally, until browned and cooked throughout – about 5 minutes. When steak and rice mixture is completed, divide among tortillas. Add lettuce and cheese. Finish off with spicy green sauce.  Roll each tortilla up into a burrito or serve as a burrito bowl. Serves 4.
